Yes I used the soffritto from the other day as my base for this dish. Yes I used white beans again. No I've never made "this" dish before. :o)
In addition to using eggplant in the ragout I also added some more tomato paste and a bit of garlic powder. And I put it over Wagon Wheel pasta!
It's a bit of a lazy "new thing" to have cooked today, but it is new ... LOL
