Found this recipe in a magazine at some point, I've had it for a while and finally made it today!
And it is SO good!
While making it, I also learned a.) What soffritto is, and b.) how to make it.
This (below) is what the soffritto I made looks like, it's a "base" for many things.

The only thing I did differently was to leave out the final cup of of veggie broth, It would have been too soupy if I'd put it in.
