Pork with homemade applesauce, glazed carrots and broccolini over rice!

*Who knew that applesauce and plain yogurt combined would taste so good?!
Who knew you could make applesauce in just over ten-minutes? This was two green apples, cored, and cut into 8 slices (each apple). There is about 1/2 an inch of freshly chopped ginger in there too. Then it was cooked with 1 1/4 cups of boiling water - allowed to "hard boil" for 10-minutes. Finally, the apples, water and ginger were put in the blender and blended. Yum!
First time ever cooking with fresh sage leaves. (The full seasoning on the pork tenderloin pieces was fresh cracked pepper, sea salt and freshly ground nutmeg, and then the sage leaves.)
And the first time I ever made a carrot glaze - after the pork was done, the juice of one large orange was poured into the pan and cooked - with the carrots still in the pan - until the juice turned into a syrup. (Medium heat.) Super Yum!
The whole meal was so good, and though it did take some time to make, it wasn't terribly long.
