Recipe #12

Rye Soda Bread
"Super-Fast, Super-Eash"

It's in the oven baking right now, so all I can comment on is that fact that is was super fast and easy ... now let's see if that translates to super tasty too!

And now, I've just realized that where it called for whole-grain flour, I used all-purpose flour ... so ... well ... um ... yeah, we'll see what happens.

Hahaha...#fail???

Bacon Pie


BACON PIE IS A THING!






You guys...bacon pie is a thing! A really really good thing. (A thing you can only do once a year, I mean that's 2.5 lbs of bacon.) So. GOOOOOOOOOD. Happy 65 Daddio! :)

Preheat oven to 350 degrees.
Frying Pan.
Sprayed with cooking spray.
Lined with parchment paper.
Layer the Bacon.
Layer of: Sliced potato. Shredded Cheddar Cheese.
Layer of: Sliced Potato. Shredded Cheddar Cheese.
Layer of: Sliced Potato. Shredded Cheddar Cheese.
Wrap bacon up around the top layer.
*Salt and Pepper - if you desire - each layer of potato (but not a lot of salt, I mean, look at all that bacon).
Place "heavy" lid on top of bacon - to hold it down while it's in the oven. And place a cookie sheet under the pan, it's gonna drip grease!
Place in oven and cook for approx. 2 hours.

Munch on that awesomeness!!!

Recipe #10.

Pork with homemade applesauce, glazed carrots and broccolini over rice! 
Cooked for Mom and I!
*Who knew that applesauce and plain yogurt combined would taste so good?!

Who knew you could make applesauce in just over ten-minutes? This was two green apples, cored, and cut into 8 slices (each apple). There is about 1/2 an inch of freshly chopped ginger in there too. Then it was cooked with 1 1/4 cups of boiling water - allowed to "hard boil" for 10-minutes. Finally, the apples, water and ginger were put in the blender and blended. Yum!

First time ever cooking with fresh sage leaves. (The full seasoning on the pork tenderloin pieces was fresh cracked pepper, sea salt and freshly ground nutmeg, and then the sage leaves.)

And the first time I ever made a carrot glaze - after the pork was done, the juice of one large orange was poured into the pan and cooked - with the carrots still in the pan - until the juice turned into a syrup. (Medium heat.) Super Yum!

The whole meal was so good, and though it did take some time to make, it wasn't terribly long.

Spicy Carrot Refrigerator Pickles!


Carrots. (1 lb.)
2 JalapeƱo Peppers.
4 Garlic Cloves.
A bit of Fresh. Cilantro.
Vinegar. (1.5 cups)
Sugar. (1/2 cup)
Water. (3/4 cup)

*This ingredient amount is for one 800 ML mason jar.

Slice everything up.

Combine vinegar, sugar and water in saucepan and heat on medium until the sugar is melted. Let cool before pouring over your veg. Once it's all in the jar, and cooled enough for the fridge, put it in there ... in a day they've pickled some ... and they'll last for at least a week. :)

BOOM.
