Spicy Carrot Refrigerator Pickles!


Carrots. (1 lb.)
2 Jalapeño Peppers.
4 Garlic Cloves.
A bit of Fresh. Cilantro.
Vinegar. (1.5 cups)
Sugar. (1/2 cup)
Water. (3/4 cup)

*This ingredient amount is for one 800 ML mason jar.

Slice everything up.

Combine vinegar, sugar and water in saucepan and heat on medium until the sugar is melted. Let cool before pouring over your veg. Once it's all in the jar, and cooled enough for the fridge, put it in there ... in a day they've pickled some ... and they'll last for at least a week. :)

BOOM.

Recipe #7

The seventh recipe from my Jamie Oliver cook book challenge is Golden Chicken Skewers in Yellow Pepper Sauce (and, from the suggested add ons for the complete meal, fresh avocado slices and quinoa). 

Both the sauce and the skewers are easy to make. It took about an hour to prep and cook.

How funny is this, this is the first time (to my recollection) that I have ever skewered anything "on my own" ... meaning, you know, not at my folks house for a summer BBQ or something ...! ;o)

Golden Chicken Skewers in Yellow Pepper Sauce with Quinoa

Chicken is skewered ... and rubbed with fresh thyme and olive oil.

The pepper sauce starts out on the stove ... yellow peppers, scallions, garlic, vinegar, water and a jalapeño pepper (the recipe called for a chile pepper, but I can't find them ANYWHERE in the Capital District -- what???!!!) Once the veg is has softened it's popped into the blender and, well, blended! ;o)

And here's the plated finale!
Avocado Slices and Quinoa to compliment the chicken.
SO. Good.

Spaghetti Squash

OMG Spaghetti Squash is the COOLEST! 

I've never made it before, in fact, I'm pretty sure I've never even eaten it before. So tasty. So cool. It just pulls apart SUPER easily and it's just like spaghetti. Like, woah! Now I know I'm not the first person to realize how cool it is, but it is très très coolio!
